This small batch of Sanctuary Whisky is a single malt, limited release handcrafted with local ingredients from Vancouver Island. This Whisky is barrel aged in bourbon, beer and wine barrels from 5 to 9 years at the award-winning Phillips Brewing Company’s Fermentorium Distillery in Victoria B.C., Canada.

Tasting Notes

APPEARANCE:
Gold, clear, no sediments, Viscosity = 3

NOSE:
Moderate, youthful, used oak, tobacco, vanilla, caramel, honey, chocolate, cookie dough, honeysuckle, apricot, tannins.

PALATE:
Sweet, light texture, short finish. Body = 2 / Complexity = 2

GRAIN:
100% Barley

Sanctuary Whisky is crafted from 100% BC barley, malted in-house at Phillips Maltworks. Aged in barrels previously used for bourbon, Phillips beer, and wine, each batch matures for 5–9 years before being artfully blended. The result is a distinctive, small-batch whisky with a rich and exciting flavor profile, making the 2024 edition of Sanctuary truly one-of-a-kind.

Cocktails

Boulevardier

1 1/4 ounces Sanctuary Whisky
1 ounce Campari
1 ounce sweet vermouth

Garnish: orange twist

Steps

  1. Add Sanctuary Whisky, Campari and sweet vermouth into a mixing glass with ice and stir until well-chilled.

  2. Strain into a rocks glass over fresh ice.

  3. Garnish with an orange twist.

  4. Serve and enjoy

Sanctuary John Collins

1 1/2 ounces Sanctuary whiskey
1 ounce lemon juice
1/2 ounce simple syrup
2 ounces club soda

Garnish: Maraschino cherry, orange slice

Steps

  1. Pour Sanctuary Whisky, lemon juice, and simple syrup into a collins glass filled with ice cubes.

  2. Stir thoroughly.

  3. Top with club soda.

  4. Garnish with a cherry and orange slice. Serve and enjoy.
