Blue Buck Baked Beans

Made with Blue Buck Pale Ale

  • 1 pound navy beans
  • 1 pound lean salt pork or bacon
  • 1 large onion
  • 1 teaspoon salt
  • 1 teaspoon dry mustard
  • 1/3 cup brown sugar
  • 1/4 cup molasses
  • 1/2 teaspoon fresh ground pepper
  • 1/3 cup honey
  • 1 bottle of Blue Buck

Cover beans with water and soak overnight, up to 24 hours. Drain and dispose of water. Add salt pork or bacon to beans in cooking pot. Cover with water and bring to a boil. Boil for about an hour, until the skin on the beans splits. Add more water as necessary during the boiling process. Remove from heat, drain and remove salt pork or bacon to a cutting board. When cool enough to touch, cut the salt pork or bacon into cubes or small pieces. Chop the onion and mix all ingredients together. Place in bean pot and cover with fresh water. Cover and place in oven at 325. Bake for 5-7 hours. Remove the cover and bake for another half hour.
