- 1 large zucchini, shredded
- 1 medium carrot, shredded
- 1 tbsp soy flour
- 1 tbsp arrow flour
- 2 tbsp water
- 1/4 cup wheat flour
- 2 tsp curry powder
Mix water, arrowroot flour, soy flour and curry powder together in a small bowl and set aside. Mix zucchini and carrot together in a large bowl. Add the mixture with the curry powder. Stir in wheat flour gradually until the mixture sticks together. Spoon 1/2 cup of the mixture onto a heated griddle with oil. Flip after you can see the edges have turned golden. When both sides of the pancake are golden, place on a plate and keep warm in the oven. Makes about 10 medium sized pancakes.
