Who doesn't like cheese dip? This is a classic snack made just a little bit tastier by the addition of the beer of your choice, and who can go wrong with beer?
- 1 pound Jalapeno Jack Cheese, chopped or shredded
- 1 pound yellow cheddar or Velveeta cheese, chopped or shredded
- 1 plum tomato, seeded and diced
- 1 tablespoon chopped fresh cilantro
- 4 ounces lager, such as Phoenix
Place the cheeses and beer in a double boiler. When the cheese has melted, stir in the tomato and cilantro.
Serve with tortilla or corn chips.
