Prep time, 10 minutes. Serves four people.
◦ 2 medium-sized cucumbers,
◦ 1.4 kilos plain yogurt
◦ 4 garlic cloves
◦ 2 tablespoons dried mint flakes
◦ 1 tablespoon olive oil
◦ 1 tablespoon fresh coriander leaves.
If you want to prepare tzatziki ahead of time, place a thin, porous cloth in a sif and strain yogurt to remove excess water. You do not need to take this step if you plan to eat tzatziki right away. Place yogurt in a salad bowl. Chop garlic very thinly, chop corriander and add them to the yogurt. Add mint flakes and olive oil, stirring thoroughly. Peel and dice cucumbers, add to yogurt mix. Serve with pita and/or veggie spears.
